ZESTY CHICKEN LETTUCE TACOS

LOW FODMAP, GLUTEN FREE, DAIRY FREE, NUT FREE

This recipe is such a healthy lunch option or light dinner, and is really cheap to make too as it avoids purchasing gluten free wraps which are often expensive, using fresh baby gem lettuce as an alternative.

Ingredients:

1 tbsp Olive Oil

1 Chicken Breast

8g Spring Onion (Green Tops only)

Juice of a lime (approx. 1 tsp)

1 Baby Gem Lettuce (leaves separated, 2 leaves per person)

2 Cherry Tomatoes (halved)

1/2 Red Pepper (thinly sliced)

5g Coriander (finely chopped)

1 tsp Paprika

Pinch Salt and Pepper

Method:

Slice chicken in half. Coat chicken in paprika.

Heat the olive oil in a griddle pan and cook on a medium heat for 5-6 minutes either side until cooked through.

Meanwhile, finely chop spring onion (green tops), coriander, red pepper and halve the cherry tomatoes. Wash the baby gem lettuce and pat dry.

Once the chicken is ready, thinly slice and transfer to lettuce tacos and top with the rest of the filling. Sprinkle fresh coriander on top, salt and pepper, and squeeze the juice of the lime over for a tasty zesty flavour!
